Five Ingredients That Look Safe but Hide Gluten

When you first go gluten-free, you give up bread, pasta, and pizza. That part is "easy" because it's obvious. The real danger comes from foods that look harmless but are secretly full of wheat.

1. Soy Sauce

Authentic soy sauce is fermented with 50% wheat. It's essentially liquid gluten. Sushi rice, stir-fries, and marinades are all off-limits unless made with Tamari (wheat-free soy sauce).

2. Licorice

Red or black, most licorice candy uses wheat flour as a binder. It is almost never gluten-free unless labeled explicitly.

3. Imitation Crab (Surimi)

That California Roll? It's likely unsafe. Surimi is fish paste held together with... you guessed it, wheat starch.

4. Salad Dressings

Thickeners give creamy dressings their texture. While some brands usually use cornstarch, many use wheat flour. Also, watch out for "malt vinegar" in vinaigrettes; malt comes from barley.

5. Soup Broth

Even clear beef or chicken broth can contain "Yeast Extract" from barley or hydrolyzed wheat protein for flavor enhancement.
